Curry Powder Recipe - Curried Chicken (Kari Ayam) (Serves 4)

What you will need:

  • 50g Mama Tan’s Curry Powder
  • 6 - 7 tbsp. vegetable oil
  • 4 cloves or 1 heap tbsp of garlic
  • 4 medium or 2 heaps tbsp of shallots
  • 2 inches of ginger
  • 3 red chillies with seeds
  • 2 stalks of fresh curry leaves (optional)
  • 1 kg boneless chicken thighs (cut into bite size cubes)
  • 3 - 4 medium potatoes (peeled & cut into cubes)
  • 400ml coconut milk
  • 600ml water
  • 1 tbsp. soy sauce (optional)
  • Sea salt to taste

Mamatan's curry powder chicken!

  • Marinate the chicken with 2 tbsp of curry powder and 2 tbsp of light soy sauce making sure it's coated well. Cover the bowl with cling film and place it in the fridge for at least an hour, or if you have time and planning ahead, leave it overnight.
  • Blend the garlic, shallots, red chillies and ginger in a food processor.
  • Add remaining curry powder in a bowl adding 2 - 3 tbsp of water and mix well.
  • Heat oil in a saucepan over medium heat. Add the blended paste and cook it until fragrant. Then add lemongrass, curry leaves and curry powder paste. Keep stirring avoid paste from burning. If it starts to dry up, add 2 tbsp of water together with the potatoes, onions and cook for a further 1 minute. Keep stirring to avoid food sticking to the saucepan.
  • Add coconut milk, water and simmer on medium heat for 15 - 2- minutes or until the potatoes cooked thoroughly.
  • Serve with plain boiled rice or flat bread.

    Permenant Stall
