Vegetarian Laksa Recipe (serves 2-3)

What you will need:

  • 100g Mama Tan’s Laksa Paste
  • 100g fine green beans (cut in half)
  • 100g fried firm tofu (slice into 1cm thick pieces)
  • 100g beansprout
  • 350g noodles (preferably fresh rice vermicelli)
  • 600ml water
  • 1/2 tin (200ml) coconut milk
  • 1 vegetable stock cube
  • 2 tbsp. light soy sauce

Mamatan's Vegetarian Laksa!

 

To prepare:

  1. Heat a medium saucepan with 600ml of boiling water, add Mama Tan’s Laksa Paste, coconut milk, vegetable stock cube and soy sauce. Bring to boil and stir until Laksa paste has dissolved.
  2. Add fine beans and fried tofu into the stock, leave to cook on medium heat approximately 10 minutes while preparing for the next stage.
  3. In another saucepan, boil 500ml water and quickly blanch beansprout for (2-5 seconds) and remove from the boiling water. Then in the same boiling water, add the fresh rice vermicelli (1-2 minutes) and drain.
  4. To serve, put noodles in a bowl, then beansprout on top and top off with the vegetable laksa and enjoy!

(Hints and tips)

Try a squeeze of lemon juice with the laksa for lighter and fresher taste.

Permenant Stall
